There is "parmesan cheese", there is Reggiano, and then there is G. Cravero Reggiano. Hand made in the San Pietro dairy in the Appennini hills of Modena, this Reggiano comes from a herd of fewer than 100 cows, and is selected for longer maturation in a purpose-built aging facility in Bra, for 24 months.
This is a creamy, soft and complex Reggiano that is wonderful to eat on its own, but of course will make any pasta dish extra special.
